If it’s our ‘product of the month’, you know it’s going to be something special. This particular dessert has so many levels to it, each level being description worthy by itself, that we faced quite a dilemma while trying to name it.
We didn’t want to under-represent any element of this dessert’s multiple layers.
That’s why, we called it the Hazelnut Shortbread with Apricot and White Chocolate Mousseline, Stewed Apricots and Milk-Chocolate Bavaroise. Phew!
As representative as it can get! We’ll break it down for you, level by delicious level, layer by indulgent layer.
Forming the base is the hazelnut short bread—crispy, crunchy and just the right base to balance the creamy richness of the moussline and bavaroise.
The apricot and white chocolate moussline forms the next level. Moussline is basically a mixture of pastry cream and butter, whipped together into a rich, silky foam-like consistency. We’ve piped it onto the base here, and filled the centre with stewed apricots.
This next layer is where things get well and truly indulgent. The Bavaroise, which simply is Bavarian cream, is composed of milk chocolate for this dessert and it adds the signature richness.
Placed on top, right in the centre, it completes the look of the dessert too. The result is a gorgeous product, with appealing contrasts, both visual and gustatory.
Because of how great it looks, this product, with a little bit of dressing, works as a great dessert option at cocktail parties, weddings, birthdays and other special occasions.
It’s the perfect example of a multi-dimensional dessert, where exotic layers come together in just the right way. But we’ll let you be the judge of that.
